Diet Soda Cake - 3.5 pts


WW Diet Soda Cake
That's right, not a typo. I believe it was the smart folks at Weight Watchers who figured out you can make any box cake low in points, simply by replacing the oil and eggs with diet soda. Sounds strange and I have always been curious about this. Today I decided to give it a shot. I used Stewart's Diet Cream Soda with a Betty Crocker Super Moist Cake Mix. I also used two egg whites to make the cake fluffier. Wow, what a delicious low fat, low point cake. I topped mine with some fat free whipped cream. Here's the recipe.

Servings: 12 pieces Bake Time: 29 minutes Points: 3.5 ww points

  • 1 dry box cake, any flavor
  • 10 oz diet soda, any flavor
  • 2 egg whites
  • Baking spray
Preheat oven according to box directions. Spray 9 x 13 pan.
Beat cake mix, diet soda and egg whites. Pour into pan.
Bake as directed on box, or until toothpick comes out clean when inserted.
Let cake cool about 10 minutes before cutting. Cut into 12 pieces. Top with fat free whipped cream if you wish.
You can also make cup cakes which would be only 1.75 points each! Print this recipe

I made this for my hubby's bday party. It was very good and got great reviews. It does not rise as much as a reg cake, and it is a little denser. I also made it a 'poke cake', poke holes in the cake w/ a fork and pour sugar free pudding over it, then chill. Was yummy!

Rosie, that would be 300ml of diet soda. 1 oz= 30ml here in the states.

Why would 12 cupcakes be a different point value than 12 cut cake pieces though? That doesn't make sense.

so far, I've loved checking out your blog....good recipes to try.

Hi Jess,
According to most cake mix directions, 1 box of cake yields 24 cupcakes. So the points for each cupcake would be half.

This works like magic. A lot of people can't tell the difference between this and a full fat cake.

I personally like using Stewart's Diet Cream Soda because it has a vanilla taste that you would normally bake with. You can really experiment though, Cherry Coke with chocolate cake, Orange Soda with white cake, Sprite with white cake.

Yes you can make these into cupcakes. I personally have not, let me know how they come out.

I made these cupcakes today, I used Betty Crocker Super Moist Choc Fudge cake mix and Vess Diet Cream Soda.. they are amazing!

Oh my yum!! These are so good. I'm wondering if you could use crystal light instead of soda? Does it require the carbonation or is it just the amount of liquid? I think I may try that.
