Czech Crepes with Berries and Cream - 2 pts

Czech Crepes filled with Berries and Cream
My father is from Prague and always made these delicious crepes, known as Palacinky for us when we were young. They can be filled with fruit, jam, whipped cream, you name it! This is a simple yet delicious low point dessert. My daughter loves having them for breakfast. I experimented with Dad's recipe to make this dessert lower in points and the results were perfect. The filling is light and healthy. Enjoy!

Servings: 10-12 servings Time: 20 minutes Points: 2 ww points

Here is my dads original recipe for crepes:

  • 1 cup flour
  • 1 1/2 cups 2 % milk
  • 3 egg eggs
  • 1 tbsp oil
  • Butter
  • Powdered sugar
Here is my lighter recipe for 1 point crepes (makes about 12):
  • 1 cup flour
  • 1 1/2 cups 1% milk
  • 1/3 cup egg whites (or 2 large egg whites)
  • 1 whole egg
  • 1 tsp oil
  • Butter flavored spray
  • Powdered sugar
Berry Filling:
  • 1 - 6 0z package blackberries
  • 1 - 6 0z package rasberries
  • 1 - 12 oz package strawberries, cut in quarters
  • 2 tbsp sugar
  • Fat Free Cool Whip
In a medium bowl, combine all berries and sugar. Let stand at least 10-15 minutes.

Meanwhile, in a medium bowl, whisk flour, milk, eggs and oil until smooth using a wire whisk or you can put in the blender. Heat a large nonstick pan on medium-low flame. When hot, spray with buttered flavored spray to coat bottom of skillet. Pour about 1/4 cup crepe mixture into pan, swirling pan slightly to make crepe thin and smooth. Cook for 1 to 2 minutes or until bottom of crepe is light golden brown. Flip; cook 30 seconds to 1 minute or until light golden brown. Repeat with remaining buttered flavored spray and crepe mixture.

To serve, spoon whipped cream into center of each crepe. Top with berry mixture and fold each edge of crepe over filling. Sprinkle lightly with powdered sugar. Best if served warm.

Recipe can easily be doubled to serve more. Extra batter can be refrigerated for up two days.

This sounds interesting and worth a try! What size brownie mix is used?

Jessica said...

so with the berries and whip cream its still only 2 points for one crepe?

Gina said...

@Jessica, yes if you use 2 tbsp fat free cool whip, which is 0 pts.
