Crock Pot Chicken Taco Chili
There is nothing like a lazy Sunday when you have a meal cooking all day in the crock pot and the aroma of food is in the air, or coming home from work on a weeknight and having dinner ready when you get home. I love my slow cooker and this chicken chili is a delicious, low point, high fiber meal. It's so easy to make and it is great over rice, with multi-grain chips, topped with low fat cheddar cheese or low fat sour cream. This makes a lot and it is even better the next day for lunch!

Servings: 10 Size: 10 oz Prep Time: 5 minutes Calories: 202 Points: 4 ww points

  • 1 onion, chopped
  • 1 16-oz can black beans
  • 1 16-oz can kidney beans
  • 1 8-oz can tomato sauce
  • 10 oz package frozen corn kernels
  • 2 14.5-oz cans diced tomatoes w/chilies
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 24 0z. (3) boneless skinless chicken breasts
  • chili peppers, chopped (optional)
  • chopped fresh cilantro
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points). Gina what is the serving size for crock pot chicken chili. And is the rice calculated in the points?

The serving size is 10 oz, the rice or cheese would be extra.

Hi Anonymous, the serving size is 10 oz. which is the same as 1 1/4 cups. Hope that helps!

The serving size is large enough that you can eat it alone and still be satisfied.

Thanks for the great blog Gina! I have the chili in my Crockpot right now! Smells great. I was wondering if you rinsed your beans or added the liquid from the can? I also wondered if the 1Tbsp of chile powder and Tbsp of cumin were correct? I thought that sounded like a bit much, so cut those to just a tsp each. Thanks!

I like spice so they were correct but you can certainly cut that back to your taste. It makes a whole lot so it didn't taste over-powering to me. I didn't rinse my beans, I added the whole can. Would love to hear how it comes out!

Sure, you can easily cut this recipe in half.

Yes it will be thick when it's completely cooked. Try not to open the lid too much.

Sorry, a few more questions! If the onions are on the bottom, will they burn? There wasn't a need to grease the crock pot in any way, right? And does it need to be stirred at all?

I made this yesterday and it didn't turn out right. When preparing it, I layed the chicken on top like you said and when I came home... after it had cooked for 10 hours on low, the chicken was cooked on the bottom and still raw on the top. I ended up having to cook on my stovetop on high heat for close to an hour to get the chicken close to being shreddable. Even still when it was finished the chicken was tough. I'm not sure what went wrong.

Something went very wrong! It always comes out cooked and the meat just falls apart. In fact I always make my chicken like that in the crock pot. Was it covered the whole time?

Yes. I put it on at 8:30am and left for work- I didn't open it until 6:30pm. It's a brand new crock pot also, I've only used it twice prior to this. Has anyone else had this issue?

Then I would try pushing the chicken down so that it is completely covered by all liquids. Was the rest of it cooked?

Thanks for this recipe. I made it yesterday(without the corn) and it was so, so good. I've never made chili before but this was incredible. I got rave reviews. I also just had leftovers for my lunch and you were right, it was better today! Yum!!!

You could always simmer on low for a few hours to get similar results.

No, it pulls apart. You can use a fork.

@ilonka - A crock pot is a slow cooker that you put all your ingredients in, you plug it in and your food slowly, safely cooks all day while you are out.

Not sure, I would let it cook 6 hours on high to make sure everything cooks. You really shouldn't cut it shorter than that.

Skipped the taco seasoning and went with real chili peppers (to include 1 habarero, 2 jalapenos and 4 other chili peppers)... less sodium. SOOOOO good!!!!

I was curious how the points get calculated? Is it based off calories or did you count the points of everything you put in?

@Nathan, I figure out the points for each ingredient that goes in, then add that together. Then I figure it how many servings it makes and divide it by that number.

That's ok. I always put it in thawed. But I heard you can use frozen chicken in the crock pot, although I have never tried that.
